My remake of the Strawberry Overnight Oats from Erewhon, but they won’t cost you $10 a pop. It took me a few tries to get the textures and flavors right, but when I did I was OBSESSED. My go to breakfast for sure!

I’m not sure when everyone decided that oats aren’t good for you, but I am here to debunk any of those rumors.
- Oats are rich in soluble fiber, particularly beta-glucan, which helps lower cholesterol levels and improve heart health. It also promotes digestive health by feeding beneficial gut bacteria. Forget what the almond moms are saying and have some damn oats.
- Chia seeds are an excellent plant-based source of omega-3 fatty acids, which are great for brain health, reducing inflammation, and supporting heart health as well as high in fiber, promoting digestive health and keeping you feeling full longer.
- Strawberries are loaded with vitamin C and antioxidants, which support immune function, skin health and protect against oxidative stress and inflammation. They also provide additional fiber to the recipe, aiding in digestion and supporting overall gut health.
- Almond milk often contains added vitamin D and E, which are important for bone health and immune function and is typically lower in calories than other milk options.
- Greek yogurt offers a protein punch for muscle recovery and satiety, while coconut yogurt provides a dairy-free option with healthy fats to keep you fueled. Totally up to you which one you choose for this recipe whether it is based on nutrition or taste preference, both are great!
- Maple syrup adds sweetness without refined sugars so adjust to your preferred levels.
It’s so important and helpful to know what you are putting in your body and what is making it feel good. Together, these ingredients create a breakfast that’s delicious and also supports overall health, from boosting immunity to aiding digestion and providing essential nutrients for your body.
Step By Step
First, make your creamy strawberry milk. Blend together all ingredients on high for 30-45 seconds until smooth. Yields a little more than 3 1/2 cups of strawberry milk.
Add the oats and chia seeds to your jars and stir to combine.
Add slightly under 1 cup of strawberry milk for each jar.
Stir and let it sit for at least 2 hours, preferably overnight. Top with sliced strawberries and enjoy! For a savory protein packed addition, try a dab of peanut butter!
