Say hello to my newest breakfast hyperfixation: Creamy Chia Pudding! There’s just something about the taste and texture of this that I literally CRAVE every single morning. It’s filled with so many health benefits and is really the perfect breakfast or protein packed snack!
What’s In It For You
Let’s break down the nutrition in this for you.
Chia Seeds: Packed with omega-3 fatty acids, fiber, and protein, chia seeds are a powerhouse ingredient that promotes heart health, aids digestion, and boosts overall wellness. Their high antioxidant content also helps combat inflammation.
Almond Milk: A low-calorie alternative to dairy, almond milk gives the pudding vitamin E and can provide a good dose of calcium to support strong bones.
Greek Yogurt: This creamy addition is a protein-rich powerhouse that keeps you satisfied and supports muscle health. Plus, it offers probiotics that enhance gut health and immune function, alongside a boost of calcium.
Maple Syrup: Not just a sweetener, maple syrup contributes essential minerals like manganese and zinc, adding a natural touch of sweetness and a hint of depth to your pudding.
Vanilla Bean Paste (Optional): A flavor enhancer that elevates the pudding without extra calories or sugar. Vanilla also brings antioxidant benefits to the mix.
Toppings: Fresh fruit adds vitamins, minerals, and extra fiber, while honey provides natural sweetness and has antimicrobial properties. Nut butters give your pudding healthy fats, protein, and additional nutrients like vitamin E and magnesium.
How It’s Made
In a large bowl whisk together almond milk, yogurt, maple syrup and vanilla until combined.
Whisk in the chia seeds then let sit for 10 minutes.
Whisk again until combined then cover and refrigerate overnight.
Top with fruit, honey and/or nut butter and enjoy! Stays fresh for 4 days in the refrigerator.
this is a go to breakfast for me! it’s so easy and tasty and never fails. I swap different fruits depending on seasonality and it helps keep it from getting boring. recently been doing sautéed apples with cinnamon and oats and it’s delicious for colder months!
Honestly I didn’t believe chia pudding could be a hyper fixation until I tried this one. Just trust, it’s so good! I usually top with fruit & granola for breakfast.
This Is my second time making this recipe and i had to double it to ensure i have some on hand all week. It’s so delicious and hits the spot every morning. Thank you!
