This recipe in my series of 20 Minute High Protein Trader Joe’s Dinners is stupid easy and a great way to get in a quick and fresh, protein-packed meal. These make the perfect lunch or dinner when you want something light and flavorful with lots of protein. The sauce is so simple to make and you can even serve the shrimp on a rice bowl if you’re feeling something heartier. Don’t skip the crunchy cashews and fresh mint on top though!
Let’s Make It!
In a small bowl, whisk together the sweet chili sauce, soy sauce, and sriracha if using. Set aside.
Heat the oil a large skillet over medium heat. Add the shrimp and cook for about 2 minutes on each side until cooked through. Turn the heat off then pour the sauce over the shrimp and stir to coat.
Assemble the lettuce cups by adding the shrimp, chopped cashews and fresh mint. I add a drizzle of sriracha on top for some extra spice too!
