Couldn’t have dreamed up a more perfect summer dinner if I tried! I cooked this dinner for some friends and everyone basically licked their plates clean. The homemade teriyaki sauce makes you seem like a professional chef, but in reality it’s probably one of the easiest sauces you can make! Once you go homemade, you’ll never go back.
I served my Spicy Tuna Crispy Rice from Seriously, So Good as an app (which is always a hit) and used the leftover pineapple to make the Spicy Grilled Pineapple Margaritas for a real restaurant quality meal at home. Delish!
If you don’t have a grill, you can totally make this on a grill pan for the same effect. Cast iron works great as well! You can also leave the thighs whole and throw directly on the grill if you don’t want to use skewers.
How It’s Made
First, make the teriyaki sauce. In a small saucepan over medium heat, add the soy sauce, water, sugar, vinegar, sriracha, ginger and garlic. Once it starts to simmer, whisk together the tapioca flour and water until fully combined then add to the mixture. Stir to combine and let it simmer and thicken for about 3-4 minutes. Pour half the sauce into a small bowl for brushing the skewers and reserve the other half for drizzling at the table.
Next, assemble your skewers. Add 2 pieces of chicken, bell pepper, onion, pineapple, then repeat until the skewer is filled. Season each skewer with salt, pepper and a drizzle of olive oil.
Heat your grill (or cast iron pan) over medium high heat. Once hot, add the skewers and cook for 4-5 minutes then flip and brush with sauce. Repeat this every 2 minutes for another 4-6 minutes until cooked through.
Serve over rice with the carrot salad (recipe below) and garnish with green onion, sesame seeds and more teriyaki sauce to drizzle.
