
Forgot how much I love Egg Salad holy shit. I did half avocado, half mayo and it came out so so perfect. If you haven’t had egg salad in a while, I am telling you it hits so different. It is the perfect lunch on some toast or a bagel. Even with crackers would be bomb.

Avocado Egg Salad
Servings 3 servings
Ingredients
- 6 eggs
- 1/2 medium-sized avocado
- 2 tbsp mayo
- 2 tsp Dijon mustard
- 1/2 tsp Kosher salt
- 1/2 tsp pepper
- Everything but the bagel seasoning to top
- 1 tbsp fresh dill or green onion optional
Instructions

Place 6 eggs in a large pot and fill with cold water to cover by at least an inch. Bring to a boil, cover and remove from heat.

After 10 minutes, place the eggs in an ice bath for an additional 10 minutes to cool and stop the cooking process.

Mash the eggs in a large bowl with the avocado. Add in remaining ingredients and combine with a fork. Season to taste.

I served this on a toasted bagel and it was 10/10!
