Mitch went from so happy that I was making meatballs to so sad because they had pumpkin in them. The truth is, these 4 Ingredient Pumpkin Turkey Meatballs don’t really taste like pumpkin, but by adding pumpkin puree to the mixture it keeps your meatballs super moist and gives them added fiber and nutrients. The meatballs take less than 15 to make – start to finish. You can serve them with pasta, spaghetti squash, zoodles, stuffed inside some French bread…. the possibilities are endless. I had it with some spaghetti squash (step by step how to cook in my highlights) and used Rao’s Homemade Marinara for on top! And yes, Mitch devoured them despite the “pumpkin” addition.
