For clarification—everything gets blended other than the chicken? I made this last night and it was delicious, but i didn’t blend anything because i wasnt sure if the beans were blended. 🙂
Yes, everything blended other than the chicken! You take the chicken out, add coconut milk or half and half then blend then add chicken back in. Xo
Delicious! A perfect fall soup!
I wanted to double the recipe, so i made it in the instapot. I used the saute function to sear the chicken and saute the veggies then added 1/2 the called for liquid (I used bone broth). I reserved the beans and added them after blending for some added texture in the finished soup.
