5 Minute Spinach & Pomegranate Salad
Ingredients
- 2 cups baby spinach
- 2 cups arugula
- 1/2 cup candied pecans
- 1/3 cup goat cheese
- 1/3 cup pomegranate seeds
- 1/4 cup olive oil
- 3 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 1 tsp Dijon mustard
- Pinch of salt and pepper
Instructions
- Whisk together olive oil, apple cider vinegar, maple syrup, mustard, salt and pepper. You might have a little extra dressing, but better than not enough.
- Add remaining ingredients to a large bowl and toss with the dressing, adding about 1 tbsp at a time until it’s fully dressed.
