Beverly Hills Cobb Salad

I honestly do not mind spending money on a nice meal, but I am not exaggerating when I tell you that I almost passed away when I got the bill at Beverly Hills hotel and my salad was $45 😂 I mean don’t get me wrong, the McCarthy salad there is AMAZING, but I just have a hard time spending money on meals I can easily make at home.

Also, if you’re wondering why it’s so expensive it’s because the Beverly Hills Hotel is just a boujey af hot spot that celebrities frequent that’s really it 🤷🏻‍♀️ Cute for photos, but I say grab a cocktail then head home and make the salad yourself! Beverly Hills Cobb Salad

SERVES: 1

Ingredients

1 cup romaine, chopped
1 cup iceberg, chopped
1/2 cup grilled chicken, diced
1/4 cup tomato, cored and diced
1/2 cup roasted red beets, diced. I get them pre-roasted at Trader Joe’s or Sprouts
1/2 cup hard boiled eggs diced, about 1 egg
1/4 cup bacon, diced
1/4 cup sharp cheddar cheese, diced
1/2 avocado
Kosher salt & pepper to serve

Dressing:

1 tablespoon olive oil
1 tablespoon balsamic vinegar
1 clove of garlic, roasted
1 teaspoon coconut sugar or maple syrup
1/4 teaspoon dijon mustard
Kosher salt & pepper

Instructions

To roast the garlic for the dressing, peel the cloves and drizzle with olive oil in tin foil. Bake at 350 for 40 minutes until soft.
Assemble your salad as shown. Whisk or blend together dressing ingredients and pour over your salad. Top with kosher salt and pepper.

Notes

Chopping everything takes some time so I suggest at least doubling the recipe to make it worth your while! I prepped everything and stored it separately for lunches for the whole week!
