Chinese Chicken Salad

Chinese Chicken Salad. What a freaking concept am I right? I’d say it’s one of my top 3 favorite salads ever (BBQ chicken number one and Waldorf number two). I order it almost every time I’m at Mendocino Farms and I was thiiiiiis freaking close to ordering it today and I thought no, my people need to experience this salad themselves no matter where they live so I made a pretty damn close replica. I made the dressing, but I scoped the salad dressing isle at the store today and there’s TONS of sesame/miso options that would work great if you’re feeling a little lazy. I bought pre cooked chicken at the store so I won’t judge ✊🏼
