Garlic Herb Prime Rib

Garlic Herb Prime Rib

SERVES: 8

TIME: 1 hour and 30 minutes

Ingredients

5 lb beef rib roast
3 tsp kosher salt
1 tsp black pepper
2 tsp fresh rosemary, chopped
2 tsp fresh thyme, chopped
6 garlic cloves, crushed or minced
3 tbsp olive oil

Instructions

Season the roast generously on all sides with salt and pepper. Place in a roasting pan and leave out at least 30 minutes, up to 1 hour.
Preheat the oven to 450 or 500 degrees (hottest your oven will get).
In a small bowl, combine the garlic, herbs and olive oil. Rub the mixture all over the roast on all sides. Place the bone side down and bake for 20 minutes.
Reduce the heat to 325 and bake for about another hour, until the internal temperature reaches about 130 (it will reach 135 while resting). Let it rest for at least 10-15 minutes then carve. Remove the bone and the bottom and then slice.
Serve with horseradish, mashed potatoes and roasted veggies!
