Let’s make a Grain Free Lemon Loaf! Made this in honor of my momma because she loves lemon almost as much as I do. This took quite a few tries to nail, but it came out perfect. This one is light and zesty and it is the perfect addition to any brunch spread. I used almond flour as the base to make this loaf grain free. Trying to make this lemon loaf with all-purpose flour? Preheat oven to 350 degrees.

In a large mixing bowl, beat together eggs and sugar until smooth.

Add the zest and juice from one lemon, sour cream, olive oil, milk and vanilla extract. Mix well.

In a separate bowl, combine almond flour, coconut flour, baking powder and salt.

Mix both dry and wet mixtures just until they are combined, being careful not to over mix!

Add batter to a parchment lined or well greased loaf tin.

Bake for 1 hour or until a tooth pick comes out of the center clean.

To make the icing, combine lemon juice and powdered sugar until you have a nice, thick glaze!

If it gets too thick, feel free to add a splash of milk to thin it out again. If it’s too thin, add more powdered sugar. It’s really impossible to mess this up!

Let the loaf cool then top with the glaze.

Slice and enjoy!

The absolute best lemon loaf recipe. So incredibly moist and not overly sweet. I turn into muffins by baking on 375 for 20 mins and 350 for 10 mins and adding poppy seeds. Perfection.
wow, super yummy and im not even a gf girlie!! hot tips: i dont like things super sweet so i slightly reduced the sugar, only used about half the glaze, and added some maldon flaky salt on top… divine!

This loaf is amazing!!! I had my bf and my friends try it and they can’t get over it. It’s sweet (but not over the top sweet) and so moist! I did not have coconut flour and used all purpose instead and still tasted wonderful. Highly recommend this recipe.
