Starting off by saying I could eat this exact meal every day for the rest of my life and be sooo happy about it! These Greek meatballs are packed with flavor, so incredibly easy to make and super healthy like always! All ingredients are from Trader Joe’s!

Greek-Style Baked Meatballs with Date Mint Pesto
Ingredients
Greek Meatball Ingredients:
- 1 lb organic grass fed beef
- 1 egg
- 1/2 red onion minced
- 2 cloves garlic minced
- 2 tbsp fresh parsley minced
- 1 tbsp fresh dill minced
- 1 tsp Kosher salt
- 1 tsp lemon pepper
- 1 tsp oregano
Date Mint Pesto Ingredients:
- 1 pitted date soaked in warm water for 5-10 min
- 1 cup basil
- 1 clove garlic
- 5 large mint leaves
- 1/2 lemon juiced
- 1/4 cup olive oil
- 1 tsp salt & pepper
Salad/Other Ingredients:
- 2 heirloom tomatoes cut into chunks
- 1/2 cucumber sliced
- 1/4 red red onion sliced
- 1/4 cup feta cheese
- 1 lemon juiced
- 1 tbsp fresh dill
- 1 tbsp fresh mint
- 1 tbsp olive oil
- 1 tsp salt & pepper
- Hummus
- Homemade Tzatziki
- Pita Bread optional
Instructions
- Preheat oven to 350 degrees.
- Combine ground beef, red onion, garlic, fresh parsley, fresh dill, egg and seasonings.
- Mix with your hands and form into small balls and place on a well oiled baking sheet.
- Bake for 15 minutes.
- While the meatballs bake, make your date mint pesto, salad and homemade tzatziki.
- For the pesto, combine all ingredients in a food processor for about 20 seconds.
- For the salad, combine all ingredients in a large mixing bowl.
- Serve meatballs over the hummus & tzatziki and top with the date mint pesto. Serve the salad on the side and add everything into a piece of pita bread to make a sandwich if you'd like!
Notes
Omit Feta cheese and side sauces for Whole30.
