I may have been hungover af when I made this, but that just means you know it had to be good if it was worth the effort in that state. This Lemon Orzo Salad was so easy to throw together and it’s super healthy without feeling like you’re eating healthy, you know? Perfect as a side with a protein or a potluck dish. Shoutout to my girl @matcha_and_margs for the inspo on this one.
Ingredients
- 1 package Banza rice or orzo
- 1/2 cup heirloom cherry tomatoes
- 1/2 cup diced cucumber
- 3 tbsp minced red onion
- 3 tbsp chopped sun-dried tomatoes
- 1/2 cup black olives
- 1 tsp capers
- feta cheese
- oregano, salt & pepper
- 1 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 lemon
Instructions
- Cook rice/orzo according to packaging and add your veggies and feta cheese.
- Toss with olive oil, red wine vinegar and lemon juice.
