Let’s talk about my One Pot Chicken Enchilada Casserole. This dish has so much flavor but it also leaves behind caked-on, burnt edges which come right off with a quick spray, rinse and wipe of Dawn Powerwash Dish Spray – I mean it’s kind of genius. No soaking necessary. It has literally changed the game for me.
Ingredients
One Pot Chicken Enchilada Casserole
- 2 cups shredded chicken (you can use a rotisserie chicken or my salsa verde recipe)
- 1 tbsp avocado oil
- 1 bell pepper chopped
- 1/2 white onion diced
- 1 can black beans drained and rinsed
- 1 cup cooked brown rice (the microwave bags from Trader Joe’s are amazing)
- 1 cup enchilada sauce
- 1/2 cup shredded Mexican cheese
- Greek yogurt
- Cilantro
Instructions
- Heat avocado oil over medium heat in a large pan. Add in your diced veggies and sauté until soft (7-10 minutes).
- Add in your black beans, shredded chicken, rice and enchilada sauce. Stir to combine.
- Top with cheese and cover until fully melted. Serve with Greek yogurt, cilantro and any other toppings of your choice!
