Staying in during a thunderstorm just begs for a delicious cozy meal. This One Pot Crispy Chicken Thighs & Rice recipe was the best meal I’d had in a long time. I wasn’t feeling very inspired so I stole this recipe from my bestie and WOW I am so glad I did. She makes it all the time and I finally gave it a try. Definitely did NOT disappoint. It’s also perfect for a Monday night since you’ll have lots of leftovers. Give it a shot and I can promise it will make its way into your weekly rotation.

We add Broccoli towards The end sometimes and use bone broth. Even great for leftovers, which i am picky about! Thank youuuuu
I make this for dinner at least once a month. SO. GOOD.
SO delicious! This spice list is a tad out of the box for my somewhat picky husband and he devoured it!! He literally asked me if I could put it in our weekly rotation! We used brown rice and cooked for an extra 15 min or so and it was perfect. Will definitely be making again!

Hi! Can you sub brown rice? If so, any changes to the cooking time?
I haven’t tried it, but yes brown rice takes longer to cook so you would need to add to the cooking time. I would suggest an additional 10-15 min.
