Salmon “Le Bowl”

A must requested recipe finally recreated (thanks to my sister Amanda for suggesting this for din). The “Le Bowl” from Zinque, a popular restuarant in West Hollywood, with Salmon instead of chicken because apparently that’s the way Hailey Bieber orders it! This delicious & simple meal comes together in less than 15 minutes and it’s the PERFECT weeknight dinner! Enjoy!

SERVES: 1 bowl

Ingredients

Protein of choice- we did baked salmon but it usually comes with chicken.
1/2 cup arugula
1/3 cup brown rice
Small handful of cherry tomatoes
1/2 avocado
Parmesan cheese

Sriracha “Mayo:”

1/3 cup Greek yogurt or Mayo
1 tbsp sriracha
1 tbsp water

Instructions

Preheat oven to 400 degrees.
Coat salmon in olive oil and top with salt, pepper, and lemon slices. Bake for 12 minutes.
Whisk together all ingredients for the sriracha Mayo. Add water as needed for thickness (should be a dressing consistency).
Layer the bowl in order: arugula, brown rice, tomatoes, avocado, cheese, protein then drizzle with sauce.
