The slow cooker has become my BFF since becoming a mom! There’s nothing better than having dinner ready and waiting for you when 6 o’clock rolls around. This recipe is my solution to my many late night takeout orders for when I’m craving something salty and satisfying but don’t have it in me to cook. These noodles are quick, easy and always comforting.
If you’re in the market for a slow cooker, this is the one I own and I love it! From my personal experience, none of the fancy ones work as well as just a good old fashioned Crockpot. I love using it in the winter for cozy meals and in the summer when it’s too hot to stand over the stove.

In a small bowl, add the soy sauce, garlic, ginger, rice vinegar, honey, toasted sesame oil, sriracha, and ¼ cup water. Stir until combined.

Add the steak to the bottom of the slow cooker. Pour the sauce on top and cover. Cook on high for 3-4 hours or low for 6-7 until the meat is tender.

In a small bowl, add the cornstarch to 1 ½ cups water and whisk until fully combined. Add the mixture to the slow cooker along with the bell peppers and stir to combine.

Add the noodles and cook, stirring every 5-10 minutes, for 20-25 minutes or until the noodles are cooked through and the bell peppers are soft.

Serve immediately with lots of chopped green onions on top.
*If omitting the noodles for a rice bowl, follow the same instructions except mix cornstarch with 2 tablespoons of water instead of 1 1/2 cups. Serve over steamed rice!Â
I am excited to make this. If I can’t find flank steak, what other beef can be substituted.

I made this last night and it was delicious. The steak was so tender my 4 and 6 year old also devoured it. I’ll be adding this into our regular rotation. We love a delicious and low maintenance meal option for our busy family!
