One of my all time favorite spring salads, not just because it’s insanely delicious but because it supports my gut and overall digestive health!
Arugula, like other dark green vegetables, are a great source of vitamins and minerals, while berries, particularly strawberries and raspberries, are rich polyphenols known as Hydroxybenzoic acids—derivatives of benzoic acid. So not only are you enjoying a delicious, refreshing salad, you are showing your gut some serious love!
These are so easy and addicting. I have made them so many times and the whole family loves them. We have made it as the salad but we often just make the salmon and eat it bowl style with some rice and veggies.
