Summer Salad looking (and tasting) I have been SO into salmon salads lately I have to stop myself from eating them for every meal. I ordered basically this exact salad Saturday night at dinner and knew I had to recreate so you all could try it! It’s the perfect meal for summer and super easy to make for one!
Ingredients
- baby kale
- strawberries
- dates
- walnuts
- avocado
- goat cheese
- lemon juice
- olive oil
- red wine vinegar
- salt & pepper
- salmon filet
- avocado oil
Instructions
- Salad is a baby kale, strawberries, dates, walnuts, avocado, and goat cheese. Dressing is equal parts olive oil, red wine vinegar and lemon juice. Added some salt and pepper too!
- Salmon is @sizzlefishfit with just salt (more than you think you need), pepper and lemon juice pan seared in avocado oil on my cast iron skillet over medium heat.
