This is for my sundried tomato lovers!! I have always loved marinating my chicken in yogurt- it gives it great flavor and keeps your chicken moist on the grill. This marinade is so delicious you will want to smother it on everything which is why I made a little extra to set aside and brush over the chicken before serving. I served these skewers over white rice and grilled some zucchini alongside the chicken for a complete meal.

In a food processor, add the sundried tomatoes and oil, Greek yogurt, basil, vinegar and salt. Process on high for 30-40 seconds until combined.

Reserve 1/2 cup of the marinade in a small bowl and refrigerate until you’re ready to grill the chicken. Add the chicken to a large bowl, tupperware or ziplock bag and add the remaining marinade over the chicken. Toss to coat the chicken in the marinade (it’s supposed to be a bit thick!). Refrigerate for at least 30 minutes up to overnight.

Add the marinated chicken pieces to a skewer, 4-5 pieces per skewer, without overcrowding the chicken.

Heat a well greased grill or grill pan over medium high heat. Add the chicken skewers and cook for 3-4 minutes. Flip, brush with a generous amount of the remaining marinade, and cook for another 3 minutes or until cooked through.

Serve over steamed white rice or with your favorite pasta and a side of grilled vegetables. We like to throw some zucchini on the grill with the chicken.
These are delightful!!! Flavorful, tender and so dang good. I can’t wait to make these again for my lunch prep next week.
This sounds so yummy! Excited to try it. I don’t own a grill or grill pan right now. Do you think it would work to bake the chicken? What temp and for how long would you suggest? Thank you!
Yes! I would do 400 for 15-20 minutes.

SO SO GOOD!!! I didn’t have any basil, and no big deal! Plan to make MANY more times. My only question/comment. When you say “grease grill” how would one do that? I used my outdoor pit and many chicken pieces stuck to it. Still tasted amazing, but I’ll take some tips!
I like to use an oil spray and spray the grates to make sure they’re nice and coated before adding the chicken. Also, if it is sticking it might not be ready to flip yet. It should loosen up from the grill when it’s ready to flip.
