I hope you’ve gotten some good use out of my 20 minute high protein dinners. These Teriyaki Chicken Meatballs are a staple in my weeknight rotation and they’re also perfect for meal prepping. Easy cleanup, pretty impossible to mess up, and they’re SO freaking delicious! You will be obsessed (if you’re not already).
Let’s See It Step By Step
These ingredients are the basics for the recipe, but you can easily customize it to your liking. I go for ground chicken, although you can pick any ground meat like turkey or pork—it cooks the same. Almond flour keeps these meatballs gluten-free, but you can use breadcrumbs too. I typically use Trader Joe’s Soyaki sauce because it is just so good and convenient, but feel free to make your own or use whichever teriyaki sauce you prefer. Like I said, it’s super easy to change things to what you like, and it’s quick and simple to make. The one thing I can’t recommend enough is keeping in the garlic and ginger as they add a flavor combo that is a must.
Combine all ingredients except the teriyaki sauce using your hands or a rubber spatula. If you are using your hands be sure to wash well and remove any jewelry.
It should look roughly like this when combined and ready to roll into balls.
Form the mixture into small balls (should make about 16-18) and place on the prepared baking sheet.
Bake for about 15 minutes until fully cooked through. Larger meatballs (12 in quantity) will take closer to 20 minutes to bake. While these are baking, I like to sauté some broccolini or zucchini to have as a veggie side.
Once they are ready, move them to a bowl and toss in teriyaki sauce. I use Trader Joe’s Soyaki and it is sooo good, but you can use whatever sauce you like!
Serve over rice and top with sesame seeds and scallions.
Add in the veggie side of your choice for a balanced meal.
If you are a sauce person like me, feel free to leave some on the side for dipping.

Made these tonight and they turned out so good. I alway worry about ground chicken being dry and flavorless, but this was not the case. I cooked em stovetop cuz too hot for my oven. Kids loved them too
