One of my goals for 2024 is to stop buying things I can easily make at home. For example, granola, almond milk, protein bars/bites, and other foods I consume regularly that are expensive and often times don’t have the cleanest ingredients. This Vanilla Cherry Cashew Granola is definitely going to be staple in my house from now on! It’s 1000x better than any store bought granola I’ve ever had, plus you’ll be shocked how easy it is to make.
Sometimes oats get a bad rap, but oats are a superfood! Loaded with fiber for digestion, they also contain beta-glucans that lower cholesterol and support heart health. Packed with nutrients and antioxidants, they’re great for stabilizing blood sugar and supporting digestion. They also have antioxidants that fight cell damage and have anti-inflammatory effects.
What do I mean by healthy oats? Think steel-cut or rolled oats—they’re loaded with all that good stuff like fiber and nutrients! What I am not referencing is the not-so-healthy ones—the super processed, sugary flavored types with added fake stuff. Stick to the less processed ones. That is also why I like to make the granola at home, you know exactly what is in it.
I love using a high quality vanilla bean paste for this recipe, but vanilla extract will also work. I used Williams-Sonoma vanilla bean paste. Every part of this recipe is super flexible to fit your needs so feel free to substitute as needed.
