Love a good plant based meal, but it’s hard to make sure you are getting enough protein and healthy fats in when you’re skipping the meat. This salad has got allll that good stuff so it actually keeps you full. V important because I am truly a bad person when I’m hungry. Whipped this up in about 6 minutes with ingredients I already had on hand.
Ingredients
- Romaine lettuce
- Strawberries
- Carrots
- Avocado
- Walnuts
- White beans drained and rinsed
- Goat cheese
- Red wine vinegar
- Olive oil
- Salt & pepper
Instructions
- Combine romaine lettuce (would also be good with a leafy green like baby kale), strawberries, carrots, avocado, walnuts, white beans (drained and rinsed), and topped with goat cheese, salt and pepper. The dressing is equal parts red wine vinegar & olive oil.
