This recipe is super customizable on your preferences from whether you like the potatoes partially skinned or not at all to how you like it seasoned with spices and herbs. You really can’t go wrong here! I give them a bit of a partial peel and am OBSESSED with fresh thyme on my potatoes, but you can also use rosemary or sage.
This side can be paired with my Filet Mignon Skewers, Garlic Parmesan Green Beans or Roasted Broccoli!
