I wanted to make a healthy, filling dinner that I could also use for meal prep throughout the week. I was also EXHAUSTED so I didn’t want to make anything too hard. This Avocado Tzatziki Chicken Salad is the perfect recipe for either stuffing inside a pita or flatbread OR topping a salad! It’s packed with flavor, healthy fats and protein. Vegetarian? Skip the chicken and just use the Avocado Tzatziki as a dipping sauce!
Ingredients
- 2 chicken breasts cooked and shredded
- 2 ripe avocados
- 1 cup Greek yogurt
- 1 grated cucumber
- 3 cloves garlic
- 1/2 lemon
- 2 tbsp fresh dill
- Salt and pepper
Instructions
- In a large bowl, mash avocados until smooth. Then add in Greek yogurt, grated cucumber (make sure you squeeze out excess moisture with a paper towel before adding), crushed garlic, juice from 1/2 lemon, fresh dill and salt & pepper to taste.
- Add in your shredded chicken - I cook mine in my Instant Pot Official for 10 minutes with 1 cup of water.
- Fully combine then add to your pita, flatbread or salad! I topped mine with fresh spinach, tomatoes, pink pickled onions (recipe on my blog), feta cheese and fresh dill.
