Here to influence you to stay at home on Valentine’s Day and make this charcuterie board whether it’s with your partner or a group of friends. All you need is a few essentials at the store along with some pantry staples and you can put together a beautiful board under $25! I went to Trader Joe’s for my finds!
How To Assemble
2 cheeses: 1 hard and 1 soft. Look for smaller pieces of cheese that are sold by weight for the best price. I used the Creamy Toscano Soaked in Syrah and Chèvre Fine Herbs Goat Cheese.
1-2 meats: I picked up salami and prosciutto, but feel free to choose one or the other since these are pricier.
Bread and/or crackers: I used the Fig & Olive Crisps and some bread I had at home. Trader Joe’s sells a demi baguette that is perfect for this!
2 accompaniments: I always need something sweet and something briny on my board. I bought a mini snack-sized pack of olives from Trader Joe’s and also added fig jam and cornichons that I had already. You can use any jam or pickles you have on hand!
Filler: Get creative with what you have! Use fresh or dried fruit, nuts, veggies, or festive candy to fill in blank spaces. If you really don’t have anything to add, buy things you’ll use throughout the week and won’t waste if you don’t use it all on the board.
Chocolate Covered Strawberries:
1 pint strawberries, washed and thoroughly dried
12 oz chocolate chips
1 tablespoon coconut oil
Line a baking sheet or large plate with parchment paper.
Melt the chocolate and coconut oil together by microwaving at 50% power, stirring every 15 seconds until melted and smooth. You can also use a double boiler to melt the chocolate.
Dip your DRY strawberries into the chocolate, giving it a swirl to coat the whole thing. Place on the parchment to set. Refrigerate for 15 minutes before serving.
