Since this is literally all I eat these days figured I share the full recipe for you to easily save! The Shrimp “Le Bowl” is my dream weeknight quick & healthy dinner. You can really use any protein, but shrimp is so easy to always have in the freezer and it’s quick to defrost. I just run it under cold water for about 5 minutes! Easy to make for a group or just yourself
Ingredients
- 4 oz shrimp
- 1/2 tsp Salt, pepper, chili powder, paprika, garlic powder and cumin to season
- 1/2 cup arugula tossed in olive oil and vinegar
- 1/3 cup brown rice
- Small handful of cherry tomatoes
- Small handful of sliced cucumbers
- 1/2 avocado
- Parmesan cheese
- Olive oil
Sriracha “Mayo:”
- 1/3 cup Greek yogurt or Mayo
- 1 tbsp sriracha
- 1 tbsp water
Instructions
- Generously season your shrimp. Heat a skillet over medium heat. Once hot, add a drizzle of oil then add your shrimp. Cook for 2-3 minutes each side. I like to add the cherry tomatoes in at the end to char a little bit!
- Whisk together all ingredients for the sriracha Mayo. Add water as needed for thickness (should be a dressing consistency).
- Layer the bowl starting with arugula, brown rice with your remaining ingredients
