Grilled Chipotle Chicken Sandwich
Ingredients
Grilled Chipotle Chicken:
- 1 1/2 lb chicken breasts
- 1/2 cup mayonnaise
- 1 chipotle pepper in adobo sauce
- Juice from 1 lime
Sandwiches:
- 4 toasted hamburger buns or bread of choice
- 4 slices of sharp cheddar cheese
- Shredded lettuce
- Tomato
Instructions
- Using an immersion or regular blender, blend together mayonnaise, chipotle pepper, and lime juice until smooth. Reserve a few tablespoons to add to your buns- the rest will be the chicken marinade.
- Add the chicken to a Tupperware and pour the mayonnaise mixture on top. Close the lid and shake to coat the chicken. Refrigerate for at least an hour, up to over night.
- When you’re ready to cook the chicken, heat the grill over medium high heat. Cook for about 3-4 minutes each side or until cooked through, depending on the thickness of your chicken breast. Add the cheese for the last minute to melt.
- Assemble your sandwiches to your liking and enjoy!
