NO COOKING REQUIRED healthy dinner! Look, I love cooking but sometimes I am straight up not in the mood. This version of the Le Bowl requires minimal effort and no actual cooking at all. Clearly it’s become a weeknight staple… ENJOY!
Ingredients
- 4 oz rotisserie chicken, shredded
- 2 cups arugula
- 1/2 cup cooked brown rice
- 1/4 cup cherry tomatoes, halved
- 1/2 avocado, cut into cubes
- 2 tablespoons Comte cheese, diced
- Freshly shaved parmesan cheese to top
- Kosher salt & black pepper to taste
Sriracha “Mayo:”
- 1/3 cup Greek yogurt or Mayo
- 1 tbsp sriracha
- 1 tbsp sesame oil
- 1 tbsp water
Instructions
- First make the sriracha mayo. In a small bowl, whisk together all ingredients. Add water as needed for thickness (should be a thick dressing consistency).
- Layer the bowl in order: arugula, brown rice, tomatoes, avocado, chicken, comte cheese, parmesan shavings, and salt & pepper to taste. Finish with a drizzle of the sriracha mayo. Makes 1 bowl with leftover sriracha mayo!
