NO COOKING REQUIRED healthy dinner! Look, I love cooking, but sometimes I am straight up not in the mood. This version of the Le Bowl requires minimal effort with no actual cooking at all and is an easy add to the weeknight rotation.
This bowl is packed with nutrients that support your health. Rotisserie chicken provides lean protein for muscle growth. Arugula is rich in anti-inflammatory vitamins and minerals. Brown rice offers fiber. Cherry tomatoes are full of antioxidants. Avocado has healthy fats and vitamins for heart health and digestion. Cheeses like Comte and Parmesan are great for bones and muscles. The Sriracha “mayo” adds creaminess, spice, and healthy fats. This bowl is a balanced meal with protein, fiber, healthy fats, vitamins, and minerals sure to have you feeling satisfied without feeling stuffed.
How It’s Made
First make the sriracha mayo. In a small bowl, whisk together all ingredients. Add water as needed for thickness (should be a thick dressing consistency).
Layer the bowl in order: arugula, brown rice, tomatoes, avocado, chicken, comte cheese, parmesan shavings, and salt & pepper to taste. Finish with a drizzle of the sriracha mayo.
